Red, White, and Blue Pancakes

Hey, folks! Today I want to share a red, white, and blue recipe with you (being that tomorrow is the 4th of July and all). I made these festive pancakes for breakfast yesterday and they were pretty delicious. Because the pancakes have fresh blueberries and strawberry jam cooked inside of them, you don't even need to add syrup. However, I won't judge if you decide to add it anyway :)
 
Ingredients:
 
1 egg, beaten
1 cup whole wheat flour
3/4 cup skim milk
1/2 tablespoon brown sugar
2 tablespoons oil (vegetable, extra virgin olive, canola, etc.)
3 teaspoons baking powder
1/2 teaspoon salt
1/2 - 3/4 cup fresh blueberries
Several tablespoons strawberry jam, microwaved for 20-30 seconds
 
Directions:
 
In a small bowl, combine the egg, flour, milk, sugar, oil, baking powder, and salt with a whisk until well incorporated.
 
Portion the batter with a measuring spoon onto a preheated griddle (depending on the size of your pancakes, this recipe yields about 8 pancakes). 
 
Place blueberries onto the top of each pancake and drizzle melted jam over each pancake.
 
Once the pancake starts to bubble and the sides are no longer runny, flip the pancake over and cook the other side.
